Ingredients

- 1 lb boneless chicken (breast or thighs)
- 1 cup small elbow macaroni
- 1 cup sharp cheddar cheese, shredded
- 1 cup mozzarella cheese, shredded
- 1 cup panko breadcrumbs
- 2 large eggs
- 1/2 cup whole milk
- 1 small onion, chopped
- 2 cloves garlic, minced
- Salt to taste
- Pepper to taste
- Fresh thyme or parsley (optional)
Instructions
- Boil salted water and cook macaroni until al dente. Drain and set aside.
- In a skillet, sauté chopped onions and minced garlic over medium heat until soft, about 3-4 minutes.
- In a large bowl, mix cooked macaroni, sautéed onion and garlic, shredded chicken, milk, and cheeses until well combined.
- Beat eggs in a separate bowl and add to the mixture, season with salt, pepper, and herbs.
- Preheat the oven to 375°F (190°C). Grease a mini muffin tin.
- Fill each cup with the mac mixture, pressing gently to hold shape.
- Top with breadcrumbs and bake for 20-25 minutes or until golden brown.
- Allow to cool before removing from the muffin tin. Serve warm.
Notes
Feel free to use rotisserie chicken for convenience. For a vegetarian option, swap chicken for cooked mushrooms or spinach.
