- 3–4 cups tart apples (Granny Smith or Honeycrisp), peeled and diced
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- a pinch of nutmeg
- a pinch of salt
- Optional: walnuts or pecans for added crunch
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, cinnamon, and salt.
- In a large bowl, cream the softened butter and sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition.
- Gradually mix in the dry ingredients to the butter mixture.
- Fold in the diced apples gently until combined.
- Pour the batter into the prepared cake pan and spread it evenly.
- Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.
- Cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely. Serve warm with whipped cream or ice cream.
Notes
This cake can be enhanced with nuts or caramel on top. Leftovers can be stored in an airtight container for up to three days.
