- 1/2 cup sugar
- 1 cup unsalted butter, chilled and diced
- 1/4 cup cold water (as needed)
- 1 cup almond paste
- 1 egg
- 1 teaspoon vanilla extract
- Powdered sugar for dusting
Instructions
- In a mixing bowl, combine the flour and sugar. Cut in the butter until the mixture resembles coarse crumbs. Slowly mix in cold water until the dough holds together. Form into a disk, wrap in plastic, and refrigerate for at least 30 minutes.
- Prepare the filling by combining almond paste, egg, and vanilla extract in a bowl. Mix until well blended.
- On a floured surface, roll out the chilled dough to 1/4 inch thickness and cut out 4-inch circles.
- Place a spoonful of the almond filling in the center of each circle. Fold the dough over and seal the edges.
- Preheat the oven to 350°F (175°C). Bake the pastries on a lined baking sheet for 20-25 minutes or until golden.
- Allow to cool slightly and dust with powdered sugar before serving.
Notes
Keep the dough cool and avoid overworking it for the best texture. For a unique flavor, try substituting with a mix of blanched and roasted almonds.
