Ingredients

  • 4 large sweet potatoes, peeled and sliced ¼ inch thick
  • 1 cup fresh or dried cranberries
  • 1 cup heavy cream
  • 2 tablespoons butter, melted
  • 2 cloves garlic, minced
  • 1 tablespoon fresh herbs (thyme or rosemary), chopped
  • Salt and pepper to taste
  • 1 cup cheese (Gruyère or sharp cheddar), optional
  • 1/2 cup breadcrumbs or nuts, optional for topping

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Peeled and slice the sweet potatoes thinly.
  3. Melt butter in a medium saucepan over medium heat, add minced garlic, and sauté for 1 minute.
  4. Stir in cream, fresh herbs, salt, and pepper, and bring to a gentle simmer.
  5. In a buttered baking dish, layer half of the sweet potato slices and half of the cranberries.
  6. Drizzle half the cream mixture over the layers.
  7. Repeat the layering with remaining sweet potatoes, cranberries, and cream.
  8. Top with cheese or breadcrumbs if using.
  9. Cover with foil and bake for 30 minutes. Remove foil and bake for another 15-20 minutes until golden and bubbly.
  10. Allow to cool for a few minutes before serving.
