Instructions
- Boil or steam the sweet potatoes until tender, about 15-20 minutes. Mash until smooth and set aside to cool slightly.
- In a large bowl, whisk together the gluten-free flour, baking powder, cinnamon, nutmeg, and salt.
- In another bowl, mix the mashed sweet potatoes, eggs, milk, and vanilla extract until smooth.
- Gradually add the dry ingredients to the wet mixture and stir until just combined.
- Preheat a skillet over medium heat and grease it with oil or butter.
- Pour a ladleful of batter onto the skillet for each pancake. Cook for 3-4 minutes until bubbles form, then flip and cook for another 2-3 minutes until golden brown.
