- 2 cups sweet potatoes, peeled and cubed
- 1 cup unsalted butter
- ½ cup granulated sugar
- 2 cups all-purpose flour
- 1 pinch of salt
- 1 cup brown sugar
- 2 eggs
- ¼ cup milk
- 1 tablespoon vanilla extract
- 1 teaspoon cinnamon
- ½ teaspoon nutmeg
- Optional: powdered sugar for dusting
Instructions
- Steam the cubed sweet potatoes for 15-20 minutes until soft, then mash until smooth and allow to cool slightly.
- Preheat oven to 350°F (175°C) and grease a 9×13-inch baking pan.
- Cream butter and sugar until light and fluffy. Add flour and salt and mix until just combined. Press into the bottom of the baking pan.
- In another bowl, combine the mashed sweet potatoes, brown sugar, eggs, milk, vanilla, and spices until smooth and creamy.
- Spread the sweet potato filling over the crust and bake for 30-35 minutes until set.
- Allow to cool completely before cutting into squares. Dust with powdered sugar if desired.
Notes
For a vegan option, substitute eggs with flax eggs and butter with coconut oil. Can use pumpkin puree instead of sweet potatoes as a variation.
