Delicious Sweet Potato Pie Bars that offer a unique balance of flavors—a creamy sweet potato filling with warm spices, all nestled in a buttery flaky crust.


Ingredients

  • 2 cups sweet potatoes, peeled and cubed
  • 1 cup unsalted butter
  • ½ cup granulated sugar
  • 2 cups all-purpose flour
  • 1 pinch of salt
  • 1 cup brown sugar
  • 2 eggs
  • ¼ cup milk
  • 1 tablespoon vanilla extract
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • Optional: powdered sugar for dusting

Instructions

  1. Steam the cubed sweet potatoes for 15-20 minutes until soft, then mash until smooth and allow to cool slightly.
  2. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  3. Cream butter and sugar until light and fluffy. Add flour and salt and mix until just combined. Press into the bottom of the baking pan.
  4. In another bowl, combine the mashed sweet potatoes, brown sugar, eggs, milk, vanilla, and spices until smooth and creamy.
  5. Spread the sweet potato filling over the crust and bake for 30-35 minutes until set.
  6. Allow to cool completely before cutting into squares. Dust with powdered sugar if desired.

Notes

For a vegan option, substitute eggs with flax eggs and butter with coconut oil. Can use pumpkin puree instead of sweet potatoes as a variation.
