- 2 large sweet potatoes
- 8 oz Brie cheese, sliced
- 1 cup fresh cranberries
- 1/2 cup chopped pecans
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
- Fresh thyme or rosemary (optional)
Instructions
- Preheat your oven to 425°F (220°C).
- Wash and peel the sweet potatoes, then slice them into 1/2-inch thick rounds.
- Toss the sweet potato rounds with olive oil, salt, and pepper in a mixing bowl.
- Arrange the rounds on a baking sheet lined with parchment paper and roast for 20-25 minutes, flipping halfway through.
- Add slices of Brie and cranberries on top of the sweet potatoes and return to the oven for an additional 5-10 minutes until the Brie is melted.
- Sprinkle with chopped pecans and fresh herbs if desired, then serve warm.
Notes
For a twist, try using butternut squash instead of sweet potatoes, or swap in walnuts for a different flavor.
