A flavorful and comforting dish featuring roasted sweet potato rounds topped with creamy Brie, tart cranberries, and crunchy pecans.


Ingredients

  • 2 large sweet potatoes
  • 8 oz Brie cheese, sliced
  • 1 cup fresh cranberries
  • 1/2 cup chopped pecans
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • Fresh thyme or rosemary (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and peel the sweet potatoes, then slice them into 1/2-inch thick rounds.
  3. Toss the sweet potato rounds with olive oil, salt, and pepper in a mixing bowl.
  4. Arrange the rounds on a baking sheet lined with parchment paper and roast for 20-25 minutes, flipping halfway through.
  5. Add slices of Brie and cranberries on top of the sweet potatoes and return to the oven for an additional 5-10 minutes until the Brie is melted.
  6. Sprinkle with chopped pecans and fresh herbs if desired, then serve warm.

Notes

For a twist, try using butternut squash instead of sweet potatoes, or swap in walnuts for a different flavor.
