- 8 ounces Brie cheese
- 1 cup cranberries (fresh or cranberry sauce)
- 1/2 cup pecans
- 2 tablespoons olive oil

Instructions
- Preheat the oven to 400°F (200°C).
- Wash and peel the sweet potatoes, then cut them into ½-inch thick rounds.
- Place the sweet potato rounds on a baking sheet lined with parchment paper, drizzle with olive oil, and season with salt and pepper. Roast for 20-25 minutes, flipping halfway through.
- Top each round with a slice or spoonful of Brie cheese and return to the oven for another 5-7 minutes until the cheese is melted.
- Spoon cranberries or cranberry sauce over the melted Brie.
- Garnish with toasted pecans before serving.
