  • 1 cup cranberries (fresh or cranberry sauce)
  • 1/2 cup pecans
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and peel the sweet potatoes, then cut them into ½-inch thick rounds.
  3. Place the sweet potato rounds on a baking sheet lined with parchment paper, drizzle with olive oil, and season with salt and pepper. Roast for 20-25 minutes, flipping halfway through.
  4. Top each round with a slice or spoonful of Brie cheese and return to the oven for another 5-7 minutes until the cheese is melted.
