- 2 large Sweet Potatoes, sliced into ½-inch rounds
- 1/2 cup Goat Cheese, crumbled
- 1/3 cup Cranberry Balsamic Glaze
- 2 tablespoons Olive Oil
- Fresh Herbs (like thyme or rosemary), to taste
- Salt and pepper to taste
Instructions
- Preheat your oven to 425°F (220°C).
- Prepare the Sweet Potatoes by slicing into ½-inch rounds and tossing with olive oil, salt, pepper, and herbs.
- Bake the rounds in a single layer on a baking sheet for 20-25 minutes, flipping halfway through.
- Add the Goat Cheese on top and return to the oven for another 5-7 minutes.
- If making your own Cranberry Balsamic Glaze, simmer ½ cup balsamic vinegar with ⅓ cup cranberry juice until thickened, about 10-15 minutes.
- Drizzle the glaze over the baked rounds before serving.
Notes
For an alternative, try ricotta or cream cheese instead of goat cheese, and substitute balsamic varieties as needed.
