  • 2 large Sweet Potatoes, sliced into ½-inch rounds
  • 1/2 cup Goat Cheese, crumbled
  • 1/3 cup Cranberry Balsamic Glaze
  • 2 tablespoons Olive Oil
  • Fresh Herbs (like thyme or rosemary), to taste
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Prepare the Sweet Potatoes by slicing into ½-inch rounds and tossing with olive oil, salt, pepper, and herbs.
  3. Bake the rounds in a single layer on a baking sheet for 20-25 minutes, flipping halfway through.
  4. Add the Goat Cheese on top and return to the oven for another 5-7 minutes.
  5. If making your own Cranberry Balsamic Glaze, simmer ½ cup balsamic vinegar with ⅓ cup cranberry juice until thickened, about 10-15 minutes.
  6. Drizzle the glaze over the baked rounds before serving.
