- 2 medium sweet potatoes, peeled and diced
- 1 cup dried cranberries
- 1/2 cup goat cheese, crumbled
- 1/4 cup fresh parsley or mint, chopped
- 3 tablespoons extra virgin olive oil
- Salt and black pepper to taste
- 1 tablespoon apple cider vinegar
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Peel and dice the sweet potatoes into even bite-sized cubes.
- Toss the sweet potatoes with olive oil, sea salt, and black pepper until well-coated, then spread them out on the baking sheet.
- Roast the sweet potatoes for 20-25 minutes until fork-tender and slightly caramelized, stirring halfway through.
- While the sweet potatoes are roasting, chop the fresh herbs and prepare the cranberries and goat cheese.
- Once the sweet potatoes are done, let them cool for about 10 minutes.
- In a large mixing bowl, combine the roasted sweet potatoes, cranberries, and crumbled goat cheese. Drizzle with olive oil and apple cider vinegar, adjusting to taste.
- Gently fold in the herbs and mix well without mashing the sweet potatoes.
- Serve warm or chilled in the fridge for about an hour before serving.
Notes
For added flavor, consider using pomegranate seeds or toasted nuts as alternatives. This dish can be made a day in advance for enhanced flavor.
