Description

Delightful and festive Swirled Christmas Cookies filled with buttery goodness and vibrant colors that evoke the spirit of the holidays.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 3 cups all-purpose flour
  • 1 tsp baking powder
  • 2 tsp vanilla extract
  • 1/2 tsp almond extract (optional)
  • Red and green food coloring
  • Confectioners’ sugar for decoration

Instructions

  1. Cream the butter and sugar in a large bowl until light and fluffy (2-3 minutes).
  2. Add eggs one at a time, mixing well after each addition, then add vanilla and almond extract.
  3. In another bowl, whisk together flour and baking powder, then gradually add to the wet mixture until just combined.
  4. Divide the dough and color one part red and another part green with food coloring.
  5. Roll each color into logs, layer one on top of the other, and roll them together to create a swirl effect.
  6. Wrap in parchment paper and refrigerate for at least an hour.
  7. Preheat the oven to 350°F (175°C). Slice the dough into ¼-inch rounds and place on a baking sheet.
  8. Bake for 8-10 minutes or until edges are lightly golden.
  9. Cool completely and optionally sprinkle with confectioners’ sugar before serving.

Notes

Using coconut oil instead of butter makes for a dairy-free option. Can also use gluten-free flour blend.
