- 1 onion, diced
- 2 cloves garlic, minced
- 1–2 bell peppers, chopped
- 1 can (14.5 oz) diced tomatoes
- 1 can (15 oz) black beans or pinto beans, drained and rinsed
- 1 packet taco seasoning
- 4 cups vegetable or chicken broth
- Salt and pepper to taste
- Toppings: shredded cheese, sour cream, fresh cilantro, crispy tortilla chips
Instructions
- In a large pot or Dutch oven, brown the ground beef over medium heat. Drain excess fat.
- Add diced onion and minced garlic, sautéing until fragrant and softened.
- Stir in bell peppers and cook until softened, about 4-5 minutes.
- Add taco seasoning, mixing well to coat the ingredients.
- Toss in diced tomatoes with their juice and add beans, stirring everything together.
- Pour in the broth, cover, and let it simmer for 15-20 minutes.
- Taste and adjust seasonings as desired, adding diced jalapeños for more heat if preferred.
- Ladle soup into bowls and finish with toppings of your choice.
