Ingredients

  • 1 onion, diced

  • 12 bell peppers, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) black beans or pinto beans, drained and rinsed
  • 1 packet taco seasoning
  • 4 cups vegetable or chicken broth
  • Salt and pepper to taste
  • Toppings: shredded cheese, sour cream, fresh cilantro, crispy tortilla chips

Instructions

  1. In a large pot or Dutch oven, brown the ground beef over medium heat. Drain excess fat.
  2. Add diced onion and minced garlic, sautéing until fragrant and softened.
  3. Stir in bell peppers and cook until softened, about 4-5 minutes.
  4. Add taco seasoning, mixing well to coat the ingredients.
  5. Toss in diced tomatoes with their juice and add beans, stirring everything together.
  6. Pour in the broth, cover, and let it simmer for 15-20 minutes.
  7. Taste and adjust seasonings as desired, adding diced jalapeños for more heat if preferred.
  8. Ladle soup into bowls and finish with toppings of your choice.
