Description

A delightful blend of soft mochi and fluffy pancakes filled with sweet taro paste, perfect for sharing with loved ones.


Ingredients

  • 1 cup Glutinous Rice Flour
  • 1 cup Water
  • 1 cup Taro, peeled and cubed
  • 1/2 cup Granulated Sugar (or honey)
  • 2 Eggs
  • 1 tsp Baking Powder
  • 1/4 cup Milk (or plant-based milk)

Instructions

  1. Peel and chop taro into small cubes and steam until tender for about 15-20 minutes. Mash until smooth and stir in sugar to taste.
  2. In a bowl, combine glutinous rice flour and water; stir until a smooth batter forms. Let rest for 30 minutes.
  3. Whisk together eggs, sugar, baking powder, and milk until well combined. Stir in the flour until just mixed.
  4. Heat a non-stick skillet over medium heat, ladle batter to form small pancakes (about 4 inches in diameter) and cook until lightly golden.
  5. Take mochi dough, flatten it, place a spoonful of taro filling in the center, and fold over to seal.
  6. Place the stuffed mochi in the skillet for a minute to crisp the outside.
  7. Serve warm with syrup or powdered sugar.

Notes

Experiment with other root vegetables for the filling or use coconut sugar for a healthier option.
