  • 1 lb boneless chicken thighs or breasts, sliced
  • 1 cup Thai basil leaves
  • 1/4 cup soy sauce
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1 bell pepper, sliced
  • 1 large carrot, sliced
  • 1 tbsp chili paste (optional)
  • 2 tbsp vegetable oil

Instructions

  1. Prep Ingredients: Slice your chicken into thin, bite-sized pieces. Chop the bell peppers and carrots into similar sizes for even cooking. Set aside your fresh Thai basil, garlic, and ginger.
  2. Heat the Skillet: Drizzle a tablespoon of vegetable oil into a large skillet or wok over medium-high heat. Allow it to get hot, but not smoking.
  3. Cook the Chicken: Add your chicken to the hot oil, spreading it out evenly. Let it brown without stirring for a couple of minutes, then stir occasionally until fully cooked.
  4. Add Aromatics: Toss in minced garlic and grated ginger, stirring quickly to prevent burning.
  5. Incorporate Veggies: Add the bell peppers and carrots. Stir-fry for about 3-4 minutes until the vegetables begin to soften but still retain a crunch.
  6. Flavor the Dish: Drizzle soy sauce (and chili paste, if using) over the stir-fry, tossing everything to ensure an even coating.
  7. Add Thai Basil: Just as you take it off the heat, fold in the Thai basil, allowing its fragrant oils to infuse into the dish.
  8. Serve: Spoon the stir-fry over steamed rice or serve it in lettuce cups for a lighter option. Enjoy!
