- 1 cup fresh pineapple chunks
- 1/2 cup green peas
- 1/2 cup bell peppers, chopped
- 2 green onions, sliced
- 2 cloves garlic, minced
- 1/2 onion, chopped
- 2 tablespoons soy sauce
- 1/4 cup cashews, chopped
- 2 eggs, beaten
- 1 tablespoon vegetable oil
Instructions
- Cook the jasmine rice according to package instructions and allow it to cool.
- In a large skillet, heat oil over medium-high heat and sauté garlic and onion until fragrant.
- Add vegetables and pineapple; stir-fry for 3-5 minutes.
- Push the veggies to the side, pour in the beaten eggs, scramble gently, then mix.
- Add the cooled rice and soy sauce, mixing until heated thoroughly.
- Stir in chopped cashews and green onions. Serve hot.
