  • 1/4 cup cashews, chopped
  • 2 eggs, beaten
  • 1 tablespoon vegetable oil

Instructions

  1. Cook the jasmine rice according to package instructions and allow it to cool.
  2. In a large skillet, heat oil over medium-high heat and sauté garlic and onion until fragrant.
  3. Add vegetables and pineapple; stir-fry for 3-5 minutes.

  5. Add the cooled rice and soy sauce, mixing until heated thoroughly.
