A delightful dessert that combines the flavors of traditional Tiramisu in a playful cake roll form, featuring rich mascarpone cream and a hint of coffee.

- 4 large Eggs
- 1 cup Granulated Sugar
- 1 cup All-Purpose Flour
- 1 tsp Baking Powder
- 1 cup Coffee or Espresso
- 1 cup Mascarpone Cheese
- 1 cup Heavy Whipping Cream
- Cocoa Powder (for dusting)
- 2 tbsp Rum or Coffee Liqueur
Instructions
- Preheat your oven to 350°F (175°C) and line a 15×10 inch jelly roll pan with parchment paper, greasing it lightly.
- In a mixing bowl, beat the eggs and sugar until pale and thick, about 5-7 minutes. Gently fold in the sifted flour and baking powder.
- Pour the batter into the prepared pan, spreading it evenly. Bake for about 12-15 minutes until it springs back when touched.
- Turn the baked cake onto a powdered sugar-dusted towel, gently peel off the parchment paper, and roll the cake with the towel. Let it cool completely.
- Whisk together the mascarpone and sugar until smooth. In another bowl, whip the heavy cream into stiff peaks and fold into the mascarpone mixture.
- Unroll the cooled cake, brush generously with coffee or liqueur, and spread the mascarpone mixture over it. Roll it back up gently.
- Wrap the roll in plastic wrap and refrigerate for at least 4 hours, preferably overnight.
- Before serving, dust with cocoa powder and slice.

Tips for success: whip eggs and sugar well for a light sponge, roll the cake carefully to avoid cracks, and chill completely for the best flavor.
