Description

A delightful dessert that combines the flavors of traditional Tiramisu in a playful cake roll form, featuring rich mascarpone cream and a hint of coffee.


Ingredients

  • 4 large Eggs
  • 1 cup Granulated Sugar
  • 1 cup All-Purpose Flour
  • 1 tsp Baking Powder
  • 1 cup Coffee or Espresso
  • 1 cup Mascarpone Cheese
  • 1 cup Heavy Whipping Cream
  • Cocoa Powder (for dusting)
  • 2 tbsp Rum or Coffee Liqueur

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 15×10 inch jelly roll pan with parchment paper, greasing it lightly.
  2. In a mixing bowl, beat the eggs and sugar until pale and thick, about 5-7 minutes. Gently fold in the sifted flour and baking powder.
  3. Pour the batter into the prepared pan, spreading it evenly. Bake for about 12-15 minutes until it springs back when touched.
  4. Turn the baked cake onto a powdered sugar-dusted towel, gently peel off the parchment paper, and roll the cake with the towel. Let it cool completely.
  5. Whisk together the mascarpone and sugar until smooth. In another bowl, whip the heavy cream into stiff peaks and fold into the mascarpone mixture.
  6. Unroll the cooled cake, brush generously with coffee or liqueur, and spread the mascarpone mixture over it. Roll it back up gently.
  7. Wrap the roll in plastic wrap and refrigerate for at least 4 hours, preferably overnight.
  8. Before serving, dust with cocoa powder and slice.

Notes

Tips for success: whip eggs and sugar well for a light sponge, roll the cake carefully to avoid cracks, and chill completely for the best flavor.
