Description
A classic Italian dessert that combines rich espresso flavor with creamy mascarpone cheese, layered between coffee-soaked ladyfinger cookies.
Ingredients
Scale
- 24 ladyfingers
- 1 ½ cups espresso coffee, cooled
- 16 oz mascarpone cheese
- 4 large eggs
- ½ cup granulated sugar
- 2 tsp vanilla extract
- 2 tbsp unsweetened cocoa powder
Instructions
- Prepare the espresso: Brew a strong cup of espresso and let it cool completely.
- Make the mascarpone mixture: In a mixing bowl, whisk together mascarpone, sugar, and vanilla until smooth. If using raw eggs, separate yolks and whites; whip the whites until stiff peaks form and fold into the mascarpone mixture.
- Soak the ladyfingers: Quickly dip each ladyfinger into cooled espresso, ensuring not to soak them too long.
- Layer the cake: In a dish, layer soaked ladyfingers, spread mascarpone mixture, and repeat until ingredients are used, finishing with mascarpone on top.
- Chill: Cover and refrigerate for at least 240 minutes, or overnight for best results.
- Dust with cocoa: Before serving, dust the top generously with cocoa powder.
Notes
For added flavor, consider using various liqueurs or a splash of vanilla extract. Make sure to let the cake chill to allow flavors to meld.
