  • 8 oz cream cheese, at room temperature
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 2 1/2 cups all-purpose flour
  • 1 tbsp instant espresso powder
  • 1/4 cup cocoa powder
  • 1 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, beat together the unsalted butter and cream cheese until smooth and fluffy, about 2-3 minutes.
  3. Gradually add the brown sugar and granulated sugar, mixing until well incorporated. Add the vanilla extract and mix until combined.
  4. Incorporate the eggs one by one, mixing well after each addition.
  5. In another bowl, whisk together the flour, instant espresso powder, and cocoa powder.
  6. Gradually add the dry mixture to the wet ingredients, mixing until just combined.
  7. Fold in chocolate chips if using.
  8. Scoop rounded balls of dough onto a lined baking sheet, leaving space between them.
  9. Bake for 10-12 minutes, or until the edges are set and the tops look slightly soft.
  10. Cool on the baking sheet for 5 minutes before transferring to a wire rack.

Ensure your butter and cream cheese are at room temperature for better mixing. Chill the dough for 30 minutes to enhance flavors and shape retention.
