- 1 cup unsalted butter, at room temperature
- 8 oz cream cheese, at room temperature
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 1 tsp vanilla extract
- 2 large eggs
- 2 1/2 cups all-purpose flour
- 1 tbsp instant espresso powder
- 1/4 cup cocoa powder
- 1 cup chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, beat together the unsalted butter and cream cheese until smooth and fluffy, about 2-3 minutes.
- Gradually add the brown sugar and granulated sugar, mixing until well incorporated. Add the vanilla extract and mix until combined.
- Incorporate the eggs one by one, mixing well after each addition.
- In another bowl, whisk together the flour, instant espresso powder, and cocoa powder.
- Gradually add the dry mixture to the wet ingredients, mixing until just combined.
- Fold in chocolate chips if using.
- Scoop rounded balls of dough onto a lined baking sheet, leaving space between them.
- Bake for 10-12 minutes, or until the edges are set and the tops look slightly soft.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
Ensure your butter and cream cheese are at room temperature for better mixing. Chill the dough for 30 minutes to enhance flavors and shape retention.
