Description

A sweet and crunchy snack mix featuring Chex cereal, pretzels, and nuts coated in a delicious toffee mixture.


Ingredients

  • 3 cups Chex cereal (Rice or Corn)
  • 2 cups pretzels
  • 1 cup mixed nuts (pecans, almonds, walnuts)
  • 1 cup unsalted butter
  • 1 cup brown sugar
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 250°F (121°C).
  2. In a large bowl, combine the Chex cereal, pretzels, and mixed nuts, stirring gently to mix.
  3. In a saucepan, melt the butter over medium heat. Once melted, add brown sugar and stir until the mixture boils gently. Let it bubble for 2-3 minutes, then remove from heat.
  4. Stir in the vanilla extract and baking soda, being cautious as it may bubble up.
  5. Pour the toffee mixture over the cereal mix and use a spatula to coat everything evenly.
  6. Spread the mixture onto a lined baking sheet in a single layer. Bake for 1 hour, stirring every 15 minutes for even cooking.
  7. Once done, remove from the oven and cool completely before breaking into pieces. Store in an airtight container.

Notes

Serve in a large bowl for snacking or in small jars for gifting. Can be paired with hot cocoa or spiced cider.
