Ingredients

  • 1 salmon fillet, fresh and skin-on
  • 1/4 cup brown sugar
  • 2 tablespoons kosher salt
  • 1 tablespoon soy sauce
  • 12 tablespoons minced garlic
  • Fresh herbs (dill or parsley)
  • Wood chips (hickory or apple)

Instructions

  1. Pat the salmon dry with paper towels to ensure crispy skin.
  2. In a bowl, combine brown sugar, kosher salt, soy sauce, and minced garlic to create a marinade.
  3. Rub the marinade evenly over the salmon and marinate in the fridge for at least 2 hours, ideally overnight.
  4. Preheat the Traeger to 180°F.
  5. Soak wood chips in water for 30 minutes, then add to the grill.
  6. Place the marinated salmon on the grill grate, skin side down, and smoke for 1 to 1.5 hours, until it reaches 145°F internally.
  7. Let the salmon rest for a few minutes before slicing and serve warm or chilled with a squeeze of lemon.
