- 1 salmon fillet, fresh and skin-on
- 1/4 cup brown sugar
- 2 tablespoons kosher salt
- 1 tablespoon soy sauce
- 1–2 tablespoons minced garlic
- Fresh herbs (dill or parsley)
- Wood chips (hickory or apple)
Instructions
- Pat the salmon dry with paper towels to ensure crispy skin.
- In a bowl, combine brown sugar, kosher salt, soy sauce, and minced garlic to create a marinade.
- Rub the marinade evenly over the salmon and marinate in the fridge for at least 2 hours, ideally overnight.
- Preheat the Traeger to 180°F.
- Soak wood chips in water for 30 minutes, then add to the grill.
- Place the marinated salmon on the grill grate, skin side down, and smoke for 1 to 1.5 hours, until it reaches 145°F internally.
- Let the salmon rest for a few minutes before slicing and serve warm or chilled with a squeeze of lemon.
