- 1 lb Ground Turkey
- 1 cup Pumpkin Puree
- 1/4 cup Fresh Sage (chopped)
- 4 cloves Garlic (minced)
- 1/2 cup Breadcrumbs
- 1 Egg
- 1 cup Vegetable Broth
- 1 Onion (diced)
- 2 tbsp Olive Oil
- Salt and Pepper to taste
Instructions
- In a large bowl, combine ground turkey, breadcrumbs, egg, minced garlic, half of the chopped sage, salt, and pepper. Mix gently until just combined.
- Shape the mixture into 1-inch balls.
- Heat olive oil in a large skillet over medium heat and brown the meatballs for 4–5 minutes on each side.
- Add diced onion to the same skillet and sauté until translucent.
- Add pumpkin puree, vegetable broth, remaining sage, and salt. Stir and simmer for 5 minutes.
- Gently add the browned meatballs back to the skillet, cover and simmer for an additional 10–15 minutes.
- Taste the sauce and adjust seasoning as needed. Serve the meatballs over creamy polenta, pasta, or with crusty bread.
Notes
Avoid overcrowding the pan when browning the meatballs to ensure they caramelize properly.
