  • 1/2 cup breadcrumbs
  • 1/4 cup Parmesan cheese, grated
  • 1/4 cup fresh sage, chopped
  • 2 cloves garlic, minced
  • 1/4 cup onion, diced
  • 1 large egg
  • 1 cup pumpkin puree
  • 1 tablespoon olive oil
  • 1/2 cup chicken or vegetable broth
  • Salt and pepper, to taste
  • Optional: crushed red pepper flakes, for kick
  • Optional: spinach or kale, for added nutrition

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine ground turkey, breadcrumbs, Parmesan cheese, chopped sage, minced garlic, diced onion, and an egg. Season with salt and pepper. Mix gently until just combined.
  3. Shape the mixture into meatballs about the size of a golf ball and place them on a parchment-lined baking sheet.
  4. Bake the meatballs for 20-25 minutes, until golden brown and cooked through.
  5. Meanwhile, in a skillet, heat olive oil over medium heat. Sauté additional garlic and onion until translucent.
  6. Add pumpkin puree and a splash of broth, stirring to reach your desired sauce consistency.
  7. Season the sauce with salt, pepper, and extra sage.
  8. Once the meatballs are done, gently transfer them to the skillet with the sauce and let them simmer for 5 minutes.
  9. Serve hot, garnished with extra sage or Parmesan if desired.

Notes

For a different flavor, swap ground turkey for ground chicken or lean beef, and pumpkin puree can be substituted with butternut squash puree or sweet potato. Gluten-free breadcrumbs work well if needed.
