- 1 lb ground turkey
- 1/2 cup breadcrumbs
- 1/4 cup Parmesan cheese, grated
- 1/4 cup fresh sage, chopped
- 2 cloves garlic, minced
- 1/4 cup onion, diced
- 1 large egg
- 1 cup pumpkin puree
- 1 tablespoon olive oil
- 1/2 cup chicken or vegetable broth
- Salt and pepper, to taste
- Optional: crushed red pepper flakes, for kick
- Optional: spinach or kale, for added nutrition
Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, combine ground turkey, breadcrumbs, Parmesan cheese, chopped sage, minced garlic, diced onion, and an egg. Season with salt and pepper. Mix gently until just combined.
- Shape the mixture into meatballs about the size of a golf ball and place them on a parchment-lined baking sheet.
- Bake the meatballs for 20-25 minutes, until golden brown and cooked through.
- Meanwhile, in a skillet, heat olive oil over medium heat. Sauté additional garlic and onion until translucent.
- Add pumpkin puree and a splash of broth, stirring to reach your desired sauce consistency.
- Season the sauce with salt, pepper, and extra sage.
- Once the meatballs are done, gently transfer them to the skillet with the sauce and let them simmer for 5 minutes.
- Serve hot, garnished with extra sage or Parmesan if desired.
Notes
For a different flavor, swap ground turkey for ground chicken or lean beef, and pumpkin puree can be substituted with butternut squash puree or sweet potato. Gluten-free breadcrumbs work well if needed.
