- 4 boneless, skinless chicken breasts
- 1 cup cremini mushrooms, chopped
- 1 cup shiitake mushrooms, chopped
- 4 cloves garlic, minced
- 8 oz cream cheese, softened
- 1/4 cup grated Parmesan cheese
- 2 tbsp fresh rosemary, chopped
- 2 tbsp fresh thyme, chopped
- 2 tbsp butter
- 1 cup chicken broth
Instructions
- Preheat your oven to 375°F (190°C).
- Using a mallet, pound the chicken breasts to about 1/2 inch thick.
- In a skillet, melt butter over medium heat and sauté chopped mushrooms until tender, about 5-7 minutes.
- Add minced garlic and cook for another minute until fragrant.
- Remove from heat and let cool. Then combine mushrooms, cream cheese, Parmesan, and herbs in a bowl.
- Spread the mushroom mixture evenly over each chicken breast and roll them tightly, securing with toothpicks.
- In the same skillet, add more butter and sear the rolled chicken on all sides until golden brown.
- Transfer the roulades to a baking dish, pour chicken broth around them, and cover with foil.
- Bake for 25-30 minutes, removing the foil in the last 10 minutes to crisp the outside.
Notes
Avoid rolling the chicken too tightly to allow the filling to expand during cooking. Let the chicken rest after baking to retain juices.
