Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
- Flatten each chicken breast to about ½ inch thickness using a meat mallet.
- Melt butter in a skillet over medium heat, add minced garlic, and sauté for 30 seconds.
- Add chopped mushrooms to the skillet, cooking until golden brown (5-7 minutes). Season with salt, pepper, and herbs; stir in Parmesan until it melts.
- Spoon the mushroom mixture onto the flattened chicken breasts and roll them up, securing with toothpicks or twine.
- Brown the rolled chicken in the skillet for 3-4 minutes, then transfer to the baking dish and bake for 25-30 minutes until cooked through (internal temperature of 165°F or 74°C).
- Allow the roulades to rest for a few minutes before slicing and serve with a fresh salad or creamy mashed potatoes.
