  • 2 tablespoons butter
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
  2. Flatten each chicken breast to about ½ inch thickness using a meat mallet.
  3. Melt butter in a skillet over medium heat, add minced garlic, and sauté for 30 seconds.
  4. Add chopped mushrooms to the skillet, cooking until golden brown (5-7 minutes). Season with salt, pepper, and herbs; stir in Parmesan until it melts.
  5. Spoon the mushroom mixture onto the flattened chicken breasts and roll them up, securing with toothpicks or twine.
