Description
Delicious cookies with a buttery base, filled with gooey caramel and topped with melted chocolate, making for a delightful treat reminiscent of Twix bars.

- 1/2 cup unsalted butter
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 1/2 cups all-purpose flour
- 1 egg yolk
- 1/4 cup caramel sauce
- 1/2 cup chocolate chips
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the unsalted butter, granulated sugar, and brown sugar until light and fluffy (about 3-4 minutes).
- Beat in the egg yolk and vanilla until well incorporated.
- Gradually add the flour, mixing until combined.
- Roll the dough into small balls (about 1 inch in diameter) and place them on the baking sheet. Press your thumb into the center of each ball to create an indentation.
- Spoon a small amount of caramel sauce into each thumbprint.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Once out of the oven, sprinkle chocolate chips on top of the caramel while still warm, allowing them to melt slightly.
- Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
For a gluten-free version, substitute all-purpose flour with gluten-free flour. You can also use different types of chocolate chips for variation.
