Description

Delicious cookies with a buttery base, filled with gooey caramel and topped with melted chocolate, making for a delightful treat reminiscent of Twix bars.


Ingredients

  • 1/2 cup unsalted butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 1/2 cups all-purpose flour
  • 1 egg yolk
  • 1/4 cup caramel sauce
  • 1/2 cup chocolate chips
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the unsalted butter, granulated sugar, and brown sugar until light and fluffy (about 3-4 minutes).
  3. Beat in the egg yolk and vanilla until well incorporated.
  4. Gradually add the flour, mixing until combined.
  5. Roll the dough into small balls (about 1 inch in diameter) and place them on the baking sheet. Press your thumb into the center of each ball to create an indentation.
  6. Spoon a small amount of caramel sauce into each thumbprint.
  7. Bake for 10-12 minutes or until the edges are lightly golden.
  8. Once out of the oven, sprinkle chocolate chips on top of the caramel while still warm, allowing them to melt slightly.
  9. Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For a gluten-free version, substitute all-purpose flour with gluten-free flour. You can also use different types of chocolate chips for variation.
