Ingredients
- Chicken (breast or thighs)
- Unsweetened coconut flakes
- Eggs
- Garlic powder
- Salt
- Pepper
- Paprika
- All-purpose flour
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Pat the chicken dry for extra crispiness.
- Create a dipping station: one bowl with flour mixed with salt and pepper, another with beaten eggs, and a third with coconut flakes mixed with garlic powder and paprika.
- Dredge each chicken piece in flour, dip in egg, and then coat thoroughly with the coconut mixture.
- Place the chicken on the prepared baking sheet and spray with cooking oil.
- Bake for 20-25 minutes until the internal temperature reaches 165°F (75°C).
- Let the chicken rest for 5 minutes before serving.
