- 2 lbs bone-in short ribs
- 2 tablespoons all-purpose flour
- 2 tablespoons vegetable oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 carrots, sliced
- 2 stalks celery, sliced
- 3 medium potatoes, diced (Russet or Yukon Gold)
- 1 tablespoon tomato paste
- 1 cup full-bodied red wine
- 4 cups low-sodium beef broth
- 2 sprigs fresh thyme
- 2 bay leaves
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions
- Pat dry the short ribs and dust with flour, salt, and pepper.
- In a large pot, heat oil over medium-high heat. Sear short ribs for 4-5 minutes per side until browned.
- Remove ribs and sauté onions, garlic, carrots, and celery in the same pot for 5-7 minutes.
- Stir in tomato paste and cook for 1 minute.
- Deglaze with red wine, scraping up browned bits, and simmer for 2-3 minutes.
- Add short ribs back to pot with beef broth, thyme, bay leaves, and potatoes. Bring to a simmer.
- Cover and reduce heat to low; simmer for 2-3 hours until ribs are tender.
- Adjust seasonings, remove herbs, and serve hot with parsley garnish.
Notes
Let the stew rest for a while before serving for the flavors to meld. This stew can be frozen for up to 3 months.
