Ingredients

  • 2 lbs bone-in short ribs
  • 2 tablespoons all-purpose flour
  • 2 tablespoons vegetable oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, sliced
  • 2 stalks celery, sliced
  • 3 medium potatoes, diced (Russet or Yukon Gold)
  • 1 tablespoon tomato paste
  • 1 cup full-bodied red wine
  • 4 cups low-sodium beef broth
  • 2 sprigs fresh thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  1. Pat dry the short ribs and dust with flour, salt, and pepper.
  2. In a large pot, heat oil over medium-high heat. Sear short ribs for 4-5 minutes per side until browned.
  3. Remove ribs and sauté onions, garlic, carrots, and celery in the same pot for 5-7 minutes.
  4. Stir in tomato paste and cook for 1 minute.
  5. Deglaze with red wine, scraping up browned bits, and simmer for 2-3 minutes.
  6. Add short ribs back to pot with beef broth, thyme, bay leaves, and potatoes. Bring to a simmer.
  7. Cover and reduce heat to low; simmer for 2-3 hours until ribs are tender.
  8. Adjust seasonings, remove herbs, and serve hot with parsley garnish.

Notes

Let the stew rest for a while before serving for the flavors to meld. This stew can be frozen for up to 3 months.
