Delicious upside-down tarts filled with sautéed mushrooms, onions, and vibrant herbs, all nestled in a golden puff pastry shell.

- 1 package of puff pastry (store-bought or homemade)
- 2 cups mushrooms (button or portobello, sliced)
- 1 large onion (caramelized)
- 2 tablespoons olive oil
- 2 cloves garlic (minced)
- Fresh herbs (thyme and rosemary, chopped)
- 1 cup melting cheese (Gruyère or mozzarella)
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a skillet, heat olive oil over medium heat. Sauté mushrooms and onions seasoned with salt and pepper for 5–7 minutes until softened and golden. Add minced garlic and herbs at the end.
- Grease a round baking dish or tart molds. Layer the sautéed mixture at the bottom and sprinkle cheese on top. Roll out the puff pastry and cover the filling, tucking in the edges.
- Make small slits in the pastry for steam to escape and bake for 25–30 minutes, or until golden brown.
- Carefully flip the tart onto a serving platter while warm to reveal the vegetable arrangement.
- Drizzle with olive oil or balsamic glaze and garnish with fresh herbs.
Notes
Feel free to substitute ingredients based on your preferences. Use goat cheese or zucchini for added variety or a lighter option.
