  • 2 cups fresh mushrooms (cremini or shiitake)
  • 1 large onion (yellow or sweet)
  • 2 tablespoons fresh herbs (thyme or rosemary)
  • 2 tablespoons olive oil or butter
  • 1/4 cup cheese (optional, goat cheese, feta, or Gruyère)
  • 2 tablespoons balsamic vinegar or maple syrup
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Clean and chop the vegetables; slice mushrooms and finely chop onions.
  3. Heat olive oil or butter in a skillet over medium heat, sauté onions until translucent (about 5 minutes), then add mushrooms and herbs, cooking until browned (8-10 minutes).
  4. Stir in balsamic vinegar or maple syrup, adjusting seasoning with salt and pepper.
  5. Spoon vegetable mixture into a muffin tin or tart pan, lay puff pastry over the top, and poke holes in it.
  6. Bake for 20-25 minutes until the pastry is golden brown.
  7. Let cool slightly, then invert onto a serving platter and garnish with herbs or cheese if desired.
