  • 1 tsp ground cumin
  • 1/2 cup tomato sauce

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Prepare bell peppers by cutting the tops off and removing seeds.
  3. In a skillet, heat olive oil and sauté garlic until golden.
  4. Add chopped mushrooms and cook until tender.
  5. Stir in cooked quinoa or rice, spices, and herbs, mixing thoroughly.
  6. Stuff each bell pepper with the filling and place upright in a baking dish.
  7. Add a splash of vegetable broth or tomato sauce at the bottom of the dish.
