Instructions
- Preheat oven to 375°F (190°C).
- Prepare bell peppers by cutting the tops off and removing seeds.
- In a skillet, heat olive oil and sauté garlic until golden.
- Add chopped mushrooms and cook until tender.
- Stir in cooked quinoa or rice, spices, and herbs, mixing thoroughly.
- Stuff each bell pepper with the filling and place upright in a baking dish.
- Add a splash of vegetable broth or tomato sauce at the bottom of the dish.
- Bake for 30-35 minutes until peppers are tender.
