  • Egg-free canton noodles or rice noodles

  • Carrots

  • Snow peas
  • Shiitake or oyster mushrooms
  • Soy sauce
  • Garlic
  • Onion
  • Sesame oil
  • Green onions

Instructions

  1. Cook the canton noodles according to package instructions. Drain and set aside, tossing with a little sesame oil to prevent sticking.
  2. In a hot skillet or wok, heat a drizzle of oil. Add minced garlic and sliced onions; sauté until fragrant and slightly golden.
  3. Toss in the vegetables—carrots, bell peppers, bok choy, and snow peas. Stir-fry for about 3-4 minutes until tender yet crisp.
  4. Add mushrooms and cook until softened, about 2-3 minutes.
  5. Gently fold in the cooked noodles, mixing thoroughly with the sautéed vegetables.
  6. Drizzle soy sauce over the noodles and mix well. Season with black pepper and a drizzle of sesame oil to taste.
  7. Top with freshly sliced green onions and serve hot!
