Ingredients
- Egg-free canton noodles or rice noodles
- Bok choy
- Carrots

- Shiitake or oyster mushrooms
- Soy sauce
- Garlic

Instructions
- Cook the canton noodles according to package instructions. Drain and set aside, tossing with a little sesame oil to prevent sticking.
- In a hot skillet or wok, heat a drizzle of oil. Add minced garlic and sliced onions; sauté until fragrant and slightly golden.
- Toss in the vegetables—carrots, bell peppers, bok choy, and snow peas. Stir-fry for about 3-4 minutes until tender yet crisp.
- Add mushrooms and cook until softened, about 2-3 minutes.
- Gently fold in the cooked noodles, mixing thoroughly with the sautéed vegetables.
- Drizzle soy sauce over the noodles and mix well. Season with black pepper and a drizzle of sesame oil to taste.
- Top with freshly sliced green onions and serve hot!
