Description

Delicious and visually stunning Vegan Ube Rolls made with purple yam and coconut milk, perfect for any occasion.

Ingredients

Scale
  • 1 cup ube (purple yam, preferably fresh or frozen)
  • 4 cups all-purpose flour (or gluten-free flour blend)
  • 1 cup coconut milk (or unsweetened almond/oat milk)
  • 2 1/4 teaspoons active dry yeast
  • 1/4 cup sugar (or coconut sugar/maple syrup)
  • 1 teaspoon salt
  • 1/4 cup vegan butter (or coconut oil)

Instructions

  1. Prepare the Ube: Peel and boil the fresh ube until tender, then mash until smooth.
  2. Activate the Yeast: Combine warm coconut milk with sugar and yeast; let it sit until frothy.
  3. Mix the Dough: Combine flour and salt, then add the yeast mixture, mashed ube, and melted vegan butter. Mix until sticky.
  4. Knead the Dough: Knead on a floured surface for about 10 minutes until smooth and elastic.
  5. First Rise: Place dough in a greased bowl, cover, and let rise for 1 to 1.5 hours until doubled.
  6. Shape the Rolls: Punch down the dough, divide, and shape into balls; place in a greased baking dish.
  7. Second Rise: Cover and let rise for 30-45 minutes.
  8. Bake the Rolls: Preheat oven to 350°F (175°C) and bake rolls for 25-30 minutes until golden brown.
  9. Cool and Serve: Brush with melted vegan butter and enjoy warm or at room temperature.

Notes

For a gluten-free option, use a gluten-free flour blend; allow extra time for the rolls to rise in the fridge overnight for deeper flavor.
