- 1 cup ube (purple yam, preferably fresh or frozen)
- 4 cups all-purpose flour (or gluten-free flour blend)
- 1 cup coconut milk (or unsweetened almond/oat milk)
- 2 1/4 teaspoons active dry yeast
- 1/4 cup sugar (or coconut sugar/maple syrup)
- 1 teaspoon salt
- 1/4 cup vegan butter (or coconut oil)
Instructions
- Prepare the Ube: Peel and boil the fresh ube until tender, then mash until smooth.
- Activate the Yeast: Combine warm coconut milk with sugar and yeast; let it sit until frothy.
- Mix the Dough: Combine flour and salt, then add the yeast mixture, mashed ube, and melted vegan butter. Mix until sticky.
- Knead the Dough: Knead on a floured surface for about 10 minutes until smooth and elastic.
- First Rise: Place dough in a greased bowl, cover, and let rise for 1 to 1.5 hours until doubled.
- Shape the Rolls: Punch down the dough, divide, and shape into balls; place in a greased baking dish.
- Second Rise: Cover and let rise for 30-45 minutes.
- Bake the Rolls: Preheat oven to 350°F (175°C) and bake rolls for 25-30 minutes until golden brown.
- Cool and Serve: Brush with melted vegan butter and enjoy warm or at room temperature.
Notes
For a gluten-free option, use a gluten-free flour blend; allow extra time for the rolls to rise in the fridge overnight for deeper flavor.
