  • 2 teaspoons instant yeast
  • 1 cup coconut milk, warm
  • 1/4 cup sugar
  • 1 teaspoon salt

Instructions

  1. Make the Dough: Combine warm coconut milk, sugar, and instant yeast in a bowl for about 5 minutes. Mix in whisked flour and salt, followed by ube until smooth.
  2. Knead the Dough: Knead on a floured surface for 5-7 minutes until smooth and elastic.
  3. First Rise: Place dough in a greased bowl, cover, and let rise in a warm spot for about 1 hour, or until doubled.
  4. Shape the Rolls: Punch down the dough, divide into 12-15 pieces, shape into balls.
  5. Second Rise: Place rolls in a greased baking pan, cover, and let rise for 30-45 minutes.
  6. Bake: Preheat oven to 375°F (190°C) and bake for 20-25 minutes until golden brown.
  7. Finishing Touch: Brush tops with melted vegan butter or coconut oil right after baking.
