Ingredients

- 1 cup ube puree
- 4 cups all-purpose flour
- 2 teaspoons active dry yeast
- 1 cup coconut milk
- 1/4 cup sugar
- 1 teaspoon salt
- 1/4 cup olive oil
Instructions
- In a large mixing bowl, combine the warm coconut milk, sugar, and yeast. Let it sit for about 10 minutes until bubbly.
- Add in the ube puree and olive oil, and mix well.
- Gradually incorporate the flour and salt, stirring until a shaggy dough forms.
- Knead the dough on a floured surface for 8-10 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover it with a kitchen towel, and let it rise in a warm spot for about 60 minutes.
- Punch down the dough, divide it into equal pieces, and shape into balls.
- Place them in a greased baking dish and let them rise for another 30-45 minutes.
- Preheat the oven to 350°F (175°C) and bake the rolls for 25-30 minutes until golden brown.
- Allow the rolls to cool slightly before serving.
Notes
For gluten-free options, use a gluten-free flour blend. These rolls can be stored at room temperature for up to two days or frozen for longer preservation.
