Description

Delightful and colorful vegan rolls made with ube puree, perfect for gatherings and special occasions.


Ingredients

  • 1 cup ube puree
  • 4 cups all-purpose flour
  • 2 teaspoons active dry yeast
  • 1 cup coconut milk
  • 1/4 cup sugar
  • 1 teaspoon salt
  • 1/4 cup olive oil

Instructions

  1. In a large mixing bowl, combine the warm coconut milk, sugar, and yeast. Let it sit for about 10 minutes until bubbly.
  2. Add in the ube puree and olive oil, and mix well.
  3. Gradually incorporate the flour and salt, stirring until a shaggy dough forms.
  4. Knead the dough on a floured surface for 8-10 minutes until smooth and elastic.
  5. Place the dough in a greased bowl, cover it with a kitchen towel, and let it rise in a warm spot for about 60 minutes.
  6. Punch down the dough, divide it into equal pieces, and shape into balls.
  7. Place them in a greased baking dish and let them rise for another 30-45 minutes.
  8. Preheat the oven to 350°F (175°C) and bake the rolls for 25-30 minutes until golden brown.
  9. Allow the rolls to cool slightly before serving.

Notes

For gluten-free options, use a gluten-free flour blend. These rolls can be stored at room temperature for up to two days or frozen for longer preservation.
