- 1 can black beans, drained and rinsed
- 8 corn or flour tortillas
- 1 cup shredded cheddar or Monterey Jack cheese (or vegan cheese)
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 cup tomato sauce
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt to taste
- 1 tablespoon olive oil
- Fresh cilantro for garnish
- Sour cream for serving (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, heat olive oil over medium heat. Sauté onions and bell peppers until soft, about 5-7 minutes. Add garlic and cook for an additional minute.
- Fold in black beans, cumin, chili powder, and salt. Heat through for about 5 minutes.
- Lay tortillas flat, scoop filling into each, and roll tightly. Place seam-side down in a greased baking dish.
- Cover with tomato sauce and sprinkle cheese on top.
- Bake uncovered for 25-30 minutes until cheese is melted and bubbling.
- Let cool slightly before serving. Garnish with cilantro and serve with sour cream if desired.
Notes
For additional flavor, consider adding chopped spinach or zucchini to the filling. Customize the spice levels to suit your taste.
