- 4 medium Sweet Potatoes, peeled and cut into 1-inch cubes
- 1 cup Walnuts, roughly chopped
- 1/4 cup Maple Syrup
- 2 tablespoons Olive Oil
- 1 teaspoon Cinnamon (or Nutmeg)
- Salt and Pepper to taste
Instructions
- Preheat the oven to 425°F (220°C).
- Wash and peel the sweet potatoes, then cut them into 1-inch cubes.
- In a large bowl, mix the sweet potato cubes with olive oil, maple syrup, salt, pepper, and your choice of spices until well coated.
- Arrange the coated sweet potatoes in a single layer on a parchment-lined baking sheet.
- Roast for about 25-30 minutes, flipping halfway through.
- Add the chopped walnuts in the last 5 minutes of roasting.
- Serve warm, drizzling extra maple syrup on top if desired.
Notes
For a nut-free version, use pumpkin seeds instead of walnuts. A squeeze of fresh lemon juice before serving adds brightness to the dish.
