  • 4 medium Sweet Potatoes, peeled and cut into 1-inch cubes
  • 1 cup Walnuts, roughly chopped
  • 1/4 cup Maple Syrup
  • 2 tablespoons Olive Oil
  • 1 teaspoon Cinnamon (or Nutmeg)
  • Salt and Pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Wash and peel the sweet potatoes, then cut them into 1-inch cubes.
  3. In a large bowl, mix the sweet potato cubes with olive oil, maple syrup, salt, pepper, and your choice of spices until well coated.
  4. Arrange the coated sweet potatoes in a single layer on a parchment-lined baking sheet.
  5. Roast for about 25-30 minutes, flipping halfway through.
  6. Add the chopped walnuts in the last 5 minutes of roasting.
  7. Serve warm, drizzling extra maple syrup on top if desired.

Notes

For a nut-free version, use pumpkin seeds instead of walnuts. A squeeze of fresh lemon juice before serving adds brightness to the dish.
