Ingredients

- 1 head of fresh green cabbage, chopped
- 4 cups vegetable or chicken broth
- 2 cloves garlic, minced
- 1 onion, chopped
- 2 diced tomatoes
- 1–2 carrots, chopped
- 2 bay leaves
- 1 teaspoon thyme
- Salt and pepper to taste
- Fresh parsley for garnish
- Additional vegetables (optional): frozen peas, bell peppers, zucchini
Instructions
- Heat a splash of olive oil in a large pot over medium heat. Sauté chopped onions and garlic until fragrant and slightly golden.
- Toss in chopped cabbage and cook until it starts to soften, about 5 minutes, stirring occasionally.
- Add diced tomatoes and your choice of broth, bringing it to a gentle simmer.
- Sprinkle in herbs and spices, adding bay leaves. Cook slowly for at least 30 minutes.
- Add nutrient-rich vegetables like carrots and zucchini halfway through cooking.
- Taste and adjust seasoning with salt or hot sauce as desired.
- Remove bay leaves and serve, garnished with fresh herbs or a squeeze of lemon.
Notes
This soup can be made ahead of time and often tastes better the next day as the flavors deepen.
