Delicious gingerbread cookies infused with warming spices and topped with a sweet icing, perfect for festive gatherings.

- 2 ½ cups all-purpose flour
- 2 tsp ground ginger
- 1 tsp ground cinnamon
- ½ tsp ground cloves
- ¾ cup molasses
- ¾ cup brown sugar
- 1 tsp baking soda
- ½ cup butter, softened
- 1 egg
- 1 tsp vanilla extract
- 1 ½ cups powdered sugar (for icing)
- Milk (for icing)
Instructions
- In a large bowl, mix together the dry ingredients: Combine flour, ground ginger, cinnamon, cloves, baking soda, and salt. Whisk until well combined.
- In another bowl, cream together the butter and sugars using an electric mixer on medium speed until fluffy and light in color, about 2–3 minutes.
- Beat in the egg and molasses, then mix in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, folding gently until just combined.
- Wrap the dough in plastic wrap and chill in the refrigerator for at least 1 hour.
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- Roll out the dough on a floured surface to about ¼ inch thick, cut out festive shapes or roll into balls and flatten slightly.
- Place cookies 2 inches apart on the baking sheet and bake for 8–10 minutes, until the edges are crisp but the centers remain soft. Cool on the sheets for a few minutes before transferring to a wire rack.
- For the icing, mix powdered sugar with milk and vanilla extract until smooth and creamy; adjust consistency if needed.
- Once cookies are cool, drizzle or pipe icing over them and let set before serving.
Notes
For a heartier touch, substitute all-purpose flour with whole wheat flour. To prevent sticking while rolling the dough, use a little flour on the surface and rolling pin.
