Description

Ingredients

  • 2 ½ cups all-purpose flour
  • 2 tsp ground ginger
  • 1 tsp ground cinnamon
  • ½ tsp ground cloves
  • ¾ cup molasses
  • ¾ cup brown sugar
  • 1 tsp baking soda
  • ½ cup butter, softened
  • 1 egg
  • 1 tsp vanilla extract
  • 1 ½ cups powdered sugar (for icing)
  • Milk (for icing)

Instructions

  1. In a large bowl, mix together the dry ingredients: Combine flour, ground ginger, cinnamon, cloves, baking soda, and salt. Whisk until well combined.
  2. In another bowl, cream together the butter and sugars using an electric mixer on medium speed until fluffy and light in color, about 2–3 minutes.
  3. Beat in the egg and molasses, then mix in the vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, folding gently until just combined.
  5. Wrap the dough in plastic wrap and chill in the refrigerator for at least 1 hour.
  6. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  7. Roll out the dough on a floured surface to about ¼ inch thick, cut out festive shapes or roll into balls and flatten slightly.
  8. Place cookies 2 inches apart on the baking sheet and bake for 8–10 minutes, until the edges are crisp but the centers remain soft. Cool on the sheets for a few minutes before transferring to a wire rack.
  9. For the icing, mix powdered sugar with milk and vanilla extract until smooth and creamy; adjust consistency if needed.
  10. Once cookies are cool, drizzle or pipe icing over them and let set before serving.

Notes

For a heartier touch, substitute all-purpose flour with whole wheat flour. To prevent sticking while rolling the dough, use a little flour on the surface and rolling pin.
