Ingredients

  • 1 seedless watermelon, cut into 1-inch cubes
  • 1 cup glutinous rice flour (sweet rice flour)
  • 1/4 cup sugar
  • 1/2 cup water
  • 1/4 cup cornstarch (for dusting)

Instructions

  1. Prepare the Watermelon: Cut watermelon into 1-inch cubes or puree for smoother filling.
  2. Make the Mochi Dough: In a microwave-safe bowl, mix glutinous rice flour and sugar; gradually add water to form a smooth batter.
  3. Cook the Mochi: Cover with plastic wrap and microwave for 1-2 minutes. Stir and microwave again for another minute until sticky and translucent.
  4. Shape the Mochi: Dust the countertop with cornstarch, roll the dough into flat discs.
  5. Fill and Seal: Place a watermelon cube in the center of each disc, fold and seal the mochi around it to form a ball.
  6. Dust and Serve: Roll in cornstarch to prevent sticking and serve cold or at room temperature.

Notes

Be patient while shaping the mochi and dust with cornstarch to avoid stickiness.
