White Chocolate Cranberry Cookies

  • 1 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 cup white chocolate chips
  • 1 cup dried cranberries

Instructions

  1. Preheat your oven to 350°F (177°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In another bowl, whisk together flour, baking soda, and baking powder. Gradually incorporate the dry ingredients into the wet mixture until just combined.
  5. Gently fold in the white chocolate chips and dried cranberries until evenly distributed.
  6. Using a cookie scoop, drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes, or until the edges are lightly golden and the centers look a tad underbaked.
  8. Allow cookies to cool on the baking sheet for a few minutes before transferring them to wire racks to cool completely.

Notes

For thicker cookies, chill the dough for at least 30 minutes before baking.
