A spectacular way to prepare barramundi, encased in a salt crust that locks in moisture and flavor.


Ingredients

Scale
  • Whole barramundi
  • Coarse sea salt
  • 2 egg whites
  • Fresh herbs (thyme, rosemary, dill)
  • 2 lemon or orange slices

Instructions

  1. Rinse the barramundi under cold water and pat it dry with paper towels.
  2. Stuff the fish cavity with fresh herbs and citrus slices.
  3. Mix the coarse sea salt with egg whites in a large bowl until it resembles wet sand.
  4. On a parchment-lined baking sheet, layer salt mixture and place the fish on top, covering it completely with the remaining salt.
  5. Bake in a preheated oven at 425°F (220°C) for about 25-30 minutes.
  6. Let it rest, then crack open the salt crust and enjoy the tender fish.
