Ingredients
Scale
- Whole barramundi
- Coarse sea salt
- 2 egg whites
- Fresh herbs (thyme, rosemary, dill)
- 2 lemon or orange slices
Instructions
- Rinse the barramundi under cold water and pat it dry with paper towels.
- Stuff the fish cavity with fresh herbs and citrus slices.
- Mix the coarse sea salt with egg whites in a large bowl until it resembles wet sand.
- On a parchment-lined baking sheet, layer salt mixture and place the fish on top, covering it completely with the remaining salt.
- Bake in a preheated oven at 425°F (220°C) for about 25-30 minutes.
- Let it rest, then crack open the salt crust and enjoy the tender fish.
