Ingredients

  • 1 cup wild rice, rinsed
  • 3 cups vegetable broth
  • 2 tablespoons butter or olive oil
  • 1 onion, finely chopped
  • 23 cloves garlic, minced
  • ½ cup chopped hazelnuts
  • 1 cup chopped dried apricots
  • Fresh thyme or parsley, to taste
  • Salt and pepper, to taste

Instructions

  1. Rinse the wild rice under cold water until the water runs clear.
  2. In a saucepan, combine the rinsed rice and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 40-50 minutes until tender.
  3. In a skillet, heat butter or olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent.
  4. Add minced garlic to the skillet and cook for an additional minute until fragrant.
  5. Stir in chopped hazelnuts and dried apricots, toasting for 2-3 minutes until aromatic.
  6. Fluff the cooked rice with a fork and combine with the sautéed mixture. Season with salt, pepper, and fresh herbs.
  7. Garnish with additional toasted hazelnuts and serve warm or at room temperature.

Notes

Feel free to swap wild rice for quinoa or farro. Other nuts like pecans or almonds can be used, and cranberries or raisins make great dried fruit alternatives.
