Ingredients

  • 2 boneless chicken breasts or thighs
  • 4 tablespoons unsalted butter
  • 4 cloves of fresh garlic, minced
  • 8 oz cremini or button mushrooms, sliced
  • 1 cup chicken or vegetable broth
  • Fresh herbs (rosemary, thyme, or parsley)
  • Salt and pepper to taste
  • Optional: Carrots or spinach for added nutrients

Instructions

  1. Season the chicken on both sides with salt and pepper.
  2. Melt 2 tablespoons of butter in a large skillet over medium heat. Add minced garlic and sauté until fragrant, about 1-2 minutes.
  3. Add the chicken to the skillet and sear each side until golden brown, about 5-7 minutes per side.
  4. Remove the chicken and set aside. In the same skillet, add sliced mushrooms and sauté until golden and tender.
  5. Return the chicken to the skillet, add the broth, and let simmer. Stir in fresh herbs and additional butter if desired.
  6. Serve warm with your favorite side dish.
