- 2 boneless chicken breasts or thighs
- 4 tablespoons unsalted butter
- 4 cloves of fresh garlic, minced
- 8 oz cremini or button mushrooms, sliced
- 1 cup chicken or vegetable broth
- Fresh herbs (rosemary, thyme, or parsley)
- Salt and pepper to taste
- Optional: Carrots or spinach for added nutrients
Instructions
- Season the chicken on both sides with salt and pepper.
- Melt 2 tablespoons of butter in a large skillet over medium heat. Add minced garlic and sauté until fragrant, about 1-2 minutes.
- Add the chicken to the skillet and sear each side until golden brown, about 5-7 minutes per side.
- Remove the chicken and set aside. In the same skillet, add sliced mushrooms and sauté until golden and tender.
- Return the chicken to the skillet, add the broth, and let simmer. Stir in fresh herbs and additional butter if desired.
- Serve warm with your favorite side dish.
Notes
Allow the sauce to simmer for depth of flavor, and consider adding a splash of lemon juice at the end for brightness.
