Instructions

  1. Prepare the ingredients: Chop the pork into bite-sized pieces, dice the potatoes, and slice the carrots.
  2. Sauté the aromatics: In a large pot, heat olive oil over medium heat. Sauté onions and garlic until fragrant and translucent.
  3. Brown the pork: Add the pork to the pan, seasoning with salt and pepper. Cook until browned on all sides, about 5–7 minutes.
  4. Add vegetables and spices: Stir in the potatoes, carrots, and parsnips. Sprinkle in cinnamon, nutmeg, and ginger, mixing well.
  5. Pour in the broth: Add enough broth to cover the ingredients by about an inch. Bring to a gentle simmer.
  6. Simmer it down: Lower the heat, cover, and let simmer for about an hour or until the pork is fork-tender.
  7. Finish with herbs: In the last 10 minutes, stir in fresh thyme and rosemary. Taste and adjust seasoning.
