- 4 medium Yukon Gold potatoes, diced

- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg

Instructions
- Prepare the ingredients: Chop the pork into bite-sized pieces, dice the potatoes, and slice the carrots.
- Sauté the aromatics: In a large pot, heat olive oil over medium heat. Sauté onions and garlic until fragrant and translucent.
- Brown the pork: Add the pork to the pan, seasoning with salt and pepper. Cook until browned on all sides, about 5–7 minutes.
- Add vegetables and spices: Stir in the potatoes, carrots, and parsnips. Sprinkle in cinnamon, nutmeg, and ginger, mixing well.
- Pour in the broth: Add enough broth to cover the ingredients by about an inch. Bring to a gentle simmer.
- Simmer it down: Lower the heat, cover, and let simmer for about an hour or until the pork is fork-tender.
- Finish with herbs: In the last 10 minutes, stir in fresh thyme and rosemary. Taste and adjust seasoning.
- Serve with love: Enjoy the stew warm with crusty bread or a side salad.

For a vegetarian option, try using tempeh instead of pork. You can add your favorite vegetables or modify the spices for variety.
