Ingredients

  • 2 lbs pork shoulder or butt, cut into chunks
  • 4 medium Yukon gold or red potatoes, chopped
  • 8 oz cremini or shiitake mushrooms, sliced
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 medium carrots, sliced
  • 4 cups vegetable or chicken broth
  • 2 tbsp olive oil
  • 2 tsp thyme (fresh or dried)
  • 2 tsp rosemary (fresh or dried)
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp allspice
  • Salt and pepper to taste

Instructions

  1. Cut the pork into hearty chunks and season with salt and pepper.
  2. In a large pot, heat olive oil over medium heat and sauté onions and garlic until soft.
  3. Add pork chunks to the pot, browning them on all sides.
  4. Stir in sliced carrots and mushrooms, cooking until softened.
  5. Add chopped potatoes and pour in enough broth to cover ingredients comfortably.
  6. Sprinkle in thyme, rosemary, cinnamon, nutmeg, and allspice.
  7. Bring to a simmer, then reduce heat, cover, and cook for 1.5 to 2 hours.
  8. Check seasoning and adjust if necessary before serving.
  9. Serve hot with crusty bread or over rice.
