- 2 lbs pork shoulder or butt, cut into chunks
- 4 medium Yukon gold or red potatoes, chopped
- 8 oz cremini or shiitake mushrooms, sliced
- 1 large onion, chopped
- 4 cloves garlic, minced
- 2 medium carrots, sliced
- 4 cups vegetable or chicken broth
- 2 tbsp olive oil
- 2 tsp thyme (fresh or dried)
- 2 tsp rosemary (fresh or dried)
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp allspice
- Salt and pepper to taste
Instructions
- Cut the pork into hearty chunks and season with salt and pepper.
- In a large pot, heat olive oil over medium heat and sauté onions and garlic until soft.
- Add pork chunks to the pot, browning them on all sides.
- Stir in sliced carrots and mushrooms, cooking until softened.
- Add chopped potatoes and pour in enough broth to cover ingredients comfortably.
- Sprinkle in thyme, rosemary, cinnamon, nutmeg, and allspice.
- Bring to a simmer, then reduce heat, cover, and cook for 1.5 to 2 hours.
- Check seasoning and adjust if necessary before serving.
- Serve hot with crusty bread or over rice.
