Ingredients

  • 1 lb boneless chicken thighs or breasts
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 1 avocado, sliced
  • 1 cup jasmine rice
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix lime juice, minced garlic, chopped cilantro, olive oil, salt, and pepper. Add chicken and marinate for at least 30 minutes.
  2. Rinse jasmine rice under cold water until clear. Cook according to package instructions (1:1.5 rice-to-water ratio).
  3. Heat a skillet over medium-high heat with a tablespoon of olive oil. Sear chicken for 6-7 minutes on each side until cooked through.
  4. Let chicken rest for 5 minutes, then slice.
  5. Fluff jasmine rice with a fork and plate with chicken and avocado slices. Garnish with extra cilantro and serve hot.
