- 1 lb boneless chicken thighs or breasts
- 1/4 cup fresh cilantro, chopped
- Juice of 2 limes
- 1 avocado, sliced
- 1 cup jasmine rice
- 3 cloves garlic, minced
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- In a bowl, mix lime juice, minced garlic, chopped cilantro, olive oil, salt, and pepper. Add chicken and marinate for at least 30 minutes.
- Rinse jasmine rice under cold water until clear. Cook according to package instructions (1:1.5 rice-to-water ratio).
- Heat a skillet over medium-high heat with a tablespoon of olive oil. Sear chicken for 6-7 minutes on each side until cooked through.
- Let chicken rest for 5 minutes, then slice.
- Fluff jasmine rice with a fork and plate with chicken and avocado slices. Garnish with extra cilantro and serve hot.
Notes
Feel free to substitute cilantro with parsley or basil, and rice with quinoa for a healthier option.
