- 8 oz pasta (spaghetti or penne)
- 1 cup ricotta cheese
- 2 cups fresh spinach
- 1 lemon (zest and juice)
- 2 cloves garlic (minced)
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Cook pasta according to package instructions, salting the water.
- In a skillet, heat olive oil over medium heat and sauté minced garlic for about 1 minute until fragrant.
- Add fresh spinach and cook until wilted, about 2 minutes.
- Reserve 1 cup of pasta water, drain the pasta, and add it to the skillet with garlic and spinach.
- Stir in ricotta cheese and a bit of reserved pasta water to create a creamy sauce.
- Add lemon juice and zest, mix well, and season with salt and pepper to taste.
- Serve immediately with extra lemon zest and a drizzle of olive oil if desired.
Notes
For a gluten-free option, swap the pasta for gluten-free varieties. Substituting arugula for spinach adds a peppery flavor.
