Ingredients

  • 8 oz pasta (spaghetti or penne)
  • 1 cup ricotta cheese
  • 2 cups fresh spinach
  • 1 lemon (zest and juice)
  • 2 cloves garlic (minced)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package instructions, salting the water.
  2. In a skillet, heat olive oil over medium heat and sauté minced garlic for about 1 minute until fragrant.
  3. Add fresh spinach and cook until wilted, about 2 minutes.
  4. Reserve 1 cup of pasta water, drain the pasta, and add it to the skillet with garlic and spinach.
  5. Stir in ricotta cheese and a bit of reserved pasta water to create a creamy sauce.
  6. Add lemon juice and zest, mix well, and season with salt and pepper to taste.
  7. Serve immediately with extra lemon zest and a drizzle of olive oil if desired.

Notes

For a gluten-free option, swap the pasta for gluten-free varieties. Substituting arugula for spinach adds a peppery flavor.
