- Spaghetti or farfalle pasta
- 1 cup ricotta cheese
- 2 cups fresh baby spinach
- 2 lemons (juiced and zested)
- 2 cloves garlic (minced)
- 2 tablespoons extra virgin olive oil
- Salt and pepper to taste
- Parmesan cheese for garnishing
Instructions
- In a large pot of salted boiling water, cook your pasta according to package directions until al dente. Reserve a cup of pasta water and drain the rest.
- In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for about a minute until fragrant.
- Toss in the fresh spinach and stir until wilted, about one minute.
- Remove the skillet from heat. Add the ricotta, lemon juice, and zest. Stir gently, adding reserved pasta water until reaching desired creaminess.
- Add the cooked pasta to the skillet and mix well until every piece of pasta is coated in the zesty ricotta mixture.
- Season with salt and pepper, serve immediately, topped with grated Parmesan cheese and a drizzle of olive oil.
Notes
Always taste as you go and monitor the garlic to prevent burning. Use reserved pasta water to achieve creamy consistency.
