Instructions

  1. Prepare the Ingredients: Begin by peeling and slicing the ripe mango into thin strips. Next, dice your cucumbers and bell peppers, and thinly slice the red onion. Chop the fresh herbs and set them aside.
  2. Make the Dressing: In a small bowl, whisk together the freshly squeezed lime juice, fish sauce, sugar or honey, and chili if using. Taste the dressing and adjust it according to your preference.
  3. Combine Everything: In a large mixing bowl, combine the mango, cucumber, bell peppers, red onion, and herbs. Drizzle the dressing over the top and gently toss to combine.
  4. Chill and Serve: Let the salad rest in the refrigerator for at least 15 minutes to allow the flavors to meld. Serve chilled or at room temperature.
  5. Garnish: Just before serving, sprinkle with additional herbs and crushed peanuts if desired.
