Ingredients
- Pasta (fettuccine or spaghetti)
- Mushrooms (cremini or shiitake)
- Garlic (fresh, roasted)
- Olive oil
- Cream (heavy or half-and-half)
- Parmesan cheese
- Fresh herbs (parsley or thyme)
- Chili flakes (optional)
Instructions
- Roast the garlic: Preheat your oven to 400°F (200°C). Slice off the top of the garlic bulb, drizzle with olive oil, wrap in foil, and roast for about 30–40 minutes until golden brown.
- Cook the pasta: Boil water in a large pot, add salt, and cook pasta according to package directions. Drain, reserving a cup of pasta water.
- Sauté the mushrooms: In a skillet, heat olive oil over medium heat. Add sliced mushrooms, salt, and a pinch of chili flakes. Sauté until browned and tender—about 5-7 minutes.
- Add garlic: Squeeze the roasted garlic cloves into the pan and stir.
- Combine: Pour in the cream and a splash of reserved pasta water. Let it simmer for a couple of minutes before incorporating the drained pasta.
- Finish with herbs: Toss in chopped parsley and a handful of parmesan cheese. Adjust seasoning, adding more salt or pepper as desired.
- Serve: Garnish with additional cheese and fresh herbs for optimal enjoyment.
Notes
For a lighter version, swap heavy cream with Greek yogurt. For a vegan option, use cashew cream instead of dairy.
